"Oh yes, of course." An introduction was usually the proper way to begin a conversation with a stranger. "Sam Tarly," he replies, bowing slightly. "A pleasure to meet you, Lady Fraser." Addressing a lady by a title was how he was raised and Sam is reluctant to call her otherwise unless she gives him explicit permission.

He has never heard of a family name called 'Fraser' but it's entirely possible that she is from a different world to him.
